I have a 98 mustang V6 that has been running hot the past few days...?

It has been in the high 90s here and my car has been running hot. I have flushed the radiator, changed the thermostat, checked the fan, the hoses and fluid and it still heats up quickly if i run it at 50-60mph or if i turn the AC on. If i let it idle or drive at 35-45mph it stays cool. it seems like if it were a water pump it would do the opposite. whats the deal?

I don't know why you say a faulty water pump would behave the opposite of what you described. I would say that symptoms fit a faulty water pump. Assuming that this is a new problem and not just an under cooled design problem, then I would check out your water pump next. Or it may be running too lean for some reason. If its fuel injected then you may have a faulty sensor somewhere.

take the thermostat out and ride the car to see if it still gets hot a high speed.. if it cools down then get a lower temperature thermo stat.. also feel the radiator hoses.. the top and bottom hoses should be the same temperature if they are not and the bottom is cooler.. then you have a circulation problem.. dirt in the radiator
a lot of aluminum engines circulate coolant thru the engine head . Because of this they also have a bleeder system to remove any air . Check and see if your engine is one of them. Then perform a bleed.
